Cooking bacon in the oven splatters on the stove top and creates hot spots on the pan. This means that some parts of the bacon will cook faster than others. This is why you may have slices of bacon that are not yet cooked when other slices are accidentally charred.
Cooking bacon in the oven cooks all the pieces of bacon evenly because the heat surrounds them. They crisp up slowly, don’t overcook and cook evenly. This is a beautiful thing.
How To Cook Bacon On The Stove
If you buy organic bacon like I do, consider rendering and storing the bacon fat. Not only does bacon fat add a richness of flavor to roasts and other dishes, it has a high smoke point, which means cooking with it is very stable.
In the photo above, you can see that my glass jar contains clear and light colored former bacon fat. When I have a new batch of bacon, I pour it right over the top, cover the jar and refrigerate.
So what do I use bacon grease for? Oh, almost everything. This is how I fry my eggs and fry any meat. It’s also great with sautéed or roasted vegetables to add depth and flavor.

Bacon in the oven is very easy, but it is important to remember a few things. Here are our top tips for perfectly crispy bacon every time:
Bacon is a great saver, so don’t be afraid of leftover bacon! Our best recommendation here is to dry the bacon with a clean towel or paper towel, slice it, and store the sliced bacon in an airtight container or bag in the refrigerator. We cook bacon between 375-400 degrees Fahrenheit. Why range you ask? Thick-cut bacon requires slightly higher heat (400°F), while regular bacon works best at 375°F (although you can shave off a few extra minutes by cooking regular-cut bacon at 400°F). If you’re not sure what kind of bacon you have, we recommend sticking to 375°F and adding a little more time at the end if needed.
