How To Make Vegan Cookies
I love chocolate and espresso together. I have shared many times over the years that this is my favorite combination. One of my favorite cookies is my Double Chocolate Espresso Almond Cookies. And the No-Bake Chocolate Espresso Cake in my cookbook is one of my top 5 desserts and has been a universal hit with readers.
Best Chewy Vegan Chocolate Chip Cookies Recipe
Step 4: Roll them into balls about 1 1/2 tablespoons. Place on a baking sheet lined with parchment paper, 2 inches apart. You should get about 16 balls.
Step 5: Roll out each cookie to 1/4 inch thick, smooth the edges and press to flatten the top. Sprinkle the espresso over the cookies, if using.
Step 6: Bake 1 pan at 350°F (177°C) for 10 minutes until golden brown.

Step 7: If using flaked sea salt, after removing the cookies, sprinkle the salt over the cookies while they are still warm.

If you are allergic to nuts, I recommend grinding raw sunflower seeds into flour. But remember, sunflower flour is never as good as almond flour, so you can end up with a sticky dough that’s hard to roll into balls, and you may need to chill the dough before baking.

These chocolate chip cookies are the best homemade chocolate chip cookies I’ve ever had. My search for cookies is over.
Delicious and very easy to make. The dough needs a very reasonable 30 minute chill in the fridge, and let me tell you, it is worth the short wait.
Also surprising? These cookies are (surprisingly) vegan. That’s right, there’s no butter or eggs in this recipe, but you’d never guess it.
Gluten Free Vegan Chocolate Chip Walnut Cookies
How can Instead of oil, these cookies use melted coconut oil, extra virgin olive oil, or a neutral-flavored oil like avocado oil. The eggs are simply removed without any negative aspects.
The rest of the ingredients are simple and healthy. You will need whole wheat flour, chocolate chips, sugar, coconut sugar or brown sugar and basic salt and yeast. I sprinkled my cookies with crushed sea salt to make them even more irresistible.
I can’t take full credit for this recipe. I was intrigued by the original recipe featured in the Ovenly Cookbook via Food52. I made some changes to his ingredients and method.
Air Fryer Chocolate Chip Cookies (small Batch)
I substituted whole wheat flour for all purpose, which is not noticeable in the final product. I also replaced the coconut sugar with less refined brown sugar (for those of you who think it’s impossible to bake cookies with liquid natural sweeteners). I have experimented with oils other than canola, which is highly processed and high in omega-6.
I also found a shortcut to cool down the weather. If you roll the dough out and then refrigerate it, 30 minutes in the freezer will work just as well as the 24 hour recommendation. So the recipe works with coconut oil that solidifies at a cool temperature.
We need to talk a little about how the choice of oil affects the final product. I didn’t notice a difference in texture with either oil, but virgin coconut oil offers a slight coconut flavor. Olive oil tastes like olive oil, especially when the cookies are warm.

If you like the taste of one of these oils on their own, I think you’ll love how they shine in these cookies and make the flavor more interesting. I am partial to coconut oil. If you want cookies that taste like baked chocolate chips, use refined coconut oil or a neutral oil like avocado oil or safflower oil.
Since the dough does not contain eggs, there is no risk of salmonella poisoning. However, raw flour may pose a slight risk for E.Coli or other pathogens. So I don’t recommend eating this dough either!
