I’m not going to lie – these microwave potato chips are, by far, one of my favorite things of the year (although this 2-pack of sweet potato chips (with pockets !) and potato skewers are close behind). While “healthy” types of chips feel good about being baked, not fried, these homemade potato chips are made in the microwave and can be made with or without oil! And they’re really crunchy – not a little but like squishy potato chips – no lame chips here!
Make Small Batch Potato Chips In The Microwave
All you need is a potato masher, a mandoline, a choice of oil and a microwave. With these, you can enjoy microwave potato chips whenever you want! And for those who are tired of microwaves – I’ve also tried the oven and air fryer methods and haven’t found a single method that works with a microwave yet – but I’ll keep digging, of course.
In fact, the disadvantage of this method is that it has to be done in small batches, which means that it may take some time to break one potato. In fact, one potato will take 4-6 batches, and at 5 minutes each, that’s 30 minutes. On the plus side, you’ll be able to use one recipe while you wait for the next one, and it’s great for portion control. You can store leftover slices in water for a long time, so you have a small snack at a time.
It is best to use fresh, firm, unpeeled potatoes. I have tried many types of potatoes and found that different potatoes have different colors when cooked but I have yet to find a “bad” result.
Microwave Potato Chips Recipe
Russet potatoes are an excellent choice for microwave potato chips. This method should also work for sweet potatoes and other tubers.
You can make these potato chips in the microwave with or without the skin. If you don’t like the skin, peel your potato first (you can save the peel for the baked potato skin chips). If you want to peel, make sure you wash/wash the potatoes first.
Stand whole or cut the potato in half (for convenience), and, using a mandoline, slice the potato into thin round slices between 1/8-1/16 inch (1.5-3 mm) in thickness. The thinner the better. Cut them directly in a bowl of cold water or once you have a few slices, put them in a bowl while you continue slicing.
Crispy Potato Chips
It is important to keep them in water as it will help keep them from changing color and begin to eliminate the excess starch in the potato (which will help the chips to be crispier).
Wash the potatoes in water, use them around them, and wash thoroughly to remove as much starch as possible. Additionally, you can let them soak for 15 minutes before rinsing.
It is important to dry the potato slices thoroughly. Otherwise, they will not melt easily in the microwave (they will steam instead). I like to do this between two clean dish towels, rubbing them and rubbing them until they are dry.
Homemade Potato Chips Crispy And Salty, Made In The Microwave
Prepare the potato slices on a sheet of paper (which can be sprayed with a little oil to keep the potato), trying to fit as many without the potato slices. Then you can brush or spray the potatoes with a little olive oil for a “richer” cut or leave them without oil.
Microwave the potato chips at 100% (high power) for 5 minutes, rotating in between. If the chips are not ready yet, reduce the power to 50% and cook for another 30 seconds (or more), until brown and crisp.
Although it is possible to use the chips before they go into the microwave, I prefer to do this for the whole process after cooking, because it takes less time.
Homemade Lay’s Potato Chips Recipe
Sprinkle the microwave chips with a little salt and seasoning of your choice. I used a combination of salt, herbs, parsley, and grated parmesan with homemade ketchup for the dip. However, feel free to stick to more “traditional” potato seasoning.
Make Ahead: It is possible to slice the potatoes and keep the slices covered with cold water in the fridge for up to a day, meaning you don’t have to do the whole potato at once.
Storage: Store microwave chips in an airtight container for a few days – they will be less moldy.
