The popcorn we sold came in prepackaged waist-high plastic bags and then dropped into the popcorn warmer. Sweet voice? I didn’t think so. It’s better to do it yourself and here we show you how to put these nuts in the microwave.

It can be messier than making popcorn on the stove. Using a microwave oven is a clean and easy experience if you do the job right. Often the problem is the wrong level of moisture, which causes the nuts not to pop. Here’s what you need to know to get the perfect bowl of fluffy popcorn.

A quick and easy way to grab a movie snack is to buy some microwave popcorn. Corn kernels are supplied in a sealed and folded paper bag that has a special laminated surface that will absorb moisture and ensure proper heat distribution. Place the folded bag in the microwave and let it do its magic.
Although a microwave for two to four minutes is generally recommended, it’s wise to check its progress on your first try. Once the rapid popping has slowed down—so that each pop lasts two to three seconds—your popcorn is ready.
Microwave popcorn comes in a variety of flavors. The most commonly sold in the UK are savoury, sweet and combinations of sweet and savoury. Sugar tends to burn quickly, so you should reduce the cooking time of the sweetened popcorn accordingly. Also, every microwave is different: in my 800W, a bag of sweet and salty popcorn will take about 2 minutes and 15 seconds, resulting in very few unpopped kernels.

However, buying prepackaged nuts means you can’t control the amount of sugar, salt or fat you consume. Also, due to the lamination, the bags are not recyclable; Concerns have also been raised about the toxic chemicals used in the materials that line these bags.
Buying bags of loose nuts is significantly cheaper than prepackaged. You can choose to microwave plain nuts or add some butter and spices. Just remember: anything sweet will burn the popcorn quickly, so keep an eye on it while it’s cooking.
To make microwave popcorn without a bag, you’ll need a large microwave-safe bowl and—preferably—an airtight, microwave-safe bowl lid. In theory, covering the bowl with a microwave-safe plate is fine, but the lack of ventilation means that steam is trapped and the bowl or plate can crack if the temperature gets too high.

If you don’t have a suitable cover, a few layers of plastic wrap attached with a rubber band over the bowl or a layer of baking paper will do the trick – just remember to poke a few small air holes in the cover. If the foil is too thin, some of the kernels may poke holes in your microwave popcorn (see photo below). The same can happen if you use baking paper without holding it.
Popcorn will take longer to cook. In my 800W oven, it only took seven minutes on average for 50-60g of nuts, with a bit of cracking in the first few minutes. Patience is key here; Try not to open the microwave as you want to keep the heat and steam inside.
Steam is especially important. Microwave ovens use microwaves to stir the water molecules in food. In popcorn, the release of water vapor inside the kernel eventually causes it to explode. Sometimes, if the kernels are old or dry, they may take longer to pop or you may end up with crunchy, brittle popcorn. In such cases, creating more moisture is beneficial.

I tried microwaving a cup of water for a minute before putting the kernels in the microwave and that resulted in less unpopped kernels as well as fluffier, chewier popcorn. Additional moisture can also be achieved by soaking the nuts in water for at least 15 minutes – if you plan ahead or have the time.
Adding oil to the kernels before microwaving them is another way to get fluffy popcorn faster—a teaspoon or so should do the trick. Adding butter means adding calories to your breakfast, mind you.
Use oven mitts when removing hot bowls from your microwave and watch out for steam when lifting the lid. Enjoy!
