Cooking bacon on the stove creates splatters on your stove and hot spots on the pan. This means that some pieces of bacon cook faster than others. And so you may have some slices of pancetta that accidentally have a little too much char, and other slices that are still cooked.
Cooking bacon in the oven cooks all your pieces of bacon evenly because the heat surrounds them. They cook slowly, do not explode and cook evenly. It’s a beautiful thing.

If you buy organic bacon, like me, definitely consider rendering it and saving the bacon fat. Bacon not only provides a rich flavor to braised meats and other dishes, but it has a high smoke point which means it is more stable for cooking.
You can see in the photo above that my glass jar already has some bacon grease that is opaque and pale in color. When I have a new batch of bacon, I pour it directly and then cover the jar and refrigerate.
So what do I use my rendered bacon fat for? Oh, about everything. That’s how I fry my eggs and how I cut any meat. It’s great for adding depth and flavor to stir-fried or roasted vegetables.

The bacon doesn’t need to be on a splattering pan with this easy method. Even better, this easy method makes perfect crispy bacon every time.
American bacon is the most common type of bacon. This popular cut comes from pork belly and is a fatty cut of meat. Flavored bacon (like maple or peppered) is also great baked in the oven.
Thick cut bacon works well in the oven. This bacon is cut about 1/8″ thick, so it will take a little longer. If you check it at 20 minutes and it’s taking longer, turn it over and put it back in the oven for a little longer.

Turkey Bacon – Turkey Bacon, which is a little leaner, works. It will take less time to bake at the same temperature so it doesn’t dry out.
