The ideal fried salmon should have a crispy skin; moist, medium rare and tender meat; and fully rendered fat. But this is not easy to achieve. The skin can stick, salmon can overcook easily, and the layer of fat under the skin can become greasy. But all these problems are easy to deal with if you use the right technique.

Cook salmon skin side down most of the time to insulate the tender flesh from the direct heat of the pan. This technique produces amazing results with minimal effort.
Whether you prefer king, coho, or sockeye salmon, you want salmon fillets that look firm and bright, with shiny skin and firm flesh. Fresh fish will return if you touch it – if the fish has a fingerprint, take it to the fishmonger and give them hell next time.
A fillet with a cut in the middle is nice and evenly shaped for pan frying, but this method works for any fillet. A five to six ounce fillet is a reasonable serving for one person.

To keep the salmon skin from sticking, it’s important to start with a hot pan (more on that in a moment). Any moisture left on the surface of the fish will quickly absorb the heat from the heated pan, so it’s equally important to dry the fish thoroughly by squeezing it between two paper towels.
After draining, season the salmon generously on both sides with salt and pepper. If you have some free time, season the fish at least 45 minutes before cooking and refrigerate for up to several hours so that the fish retains more moisture while it cooks. (If you don’t have at least 45 minutes, it’s best to season before cooking so the moisture drawn in by the salt doesn’t ruin the crispy skin.)
Heat a thin layer of oil in a stainless steel, cast iron, or carbon steel skillet over medium heat until it begins to shimmer. This is the most important step. If the salmon gets into a pan that is too cold, it forms a chemical bond with the metal, making it impossible to turn it over without tearing the skin. Preheating the pan and oil will speed up the setting of the proteins before they bind to the fish.

While you need a very high heat in the beginning, cooking at this temperature all the time will cause the salmon to overcook on the outer layers, causing it to turn chalky and leak out that unsightly white protein. So, before adding the fish, reduce the heat under the pan to medium.
Carefully add the fish to the pan, using your hands to lower it away from you so you don’t accidentally touch yourself with the hot oil. Remember: hot characters can absorb fear. Cast carefully and confidently, keeping the fish out, which can lead to dangerous splashes.
If left unattended, the salmon skin can warp and curl, causing the fish to cook unevenly. To avoid this, once the salmon is in the pan, gently but firmly tap the back of the salmon with a flexible slotted fish spatula for 10 seconds. If you are cooking multiple fillets at once, add them to the pan one at a time and fry each for 10 seconds before adding the next.

This is a big salmon trick. Salmon skin usually has a thick layer of fat underneath. This fat must be provided to keep the skin fresh and pleasant. The fat is also a great insulator, meaning that cooking salmon skin-side down is much gentler on the meat than cooking it skin-side up. To take advantage of the skin’s insulating properties and shed fat in the process, I cook salmon 90% skin side down.
Salmon with a beautiful translucent core, medium-rare, cook until the thermometer in the center of the fillet reads 120°F (49°C). For a large fillet, as shown in the photo, it takes six minutes.
If you manage the temperature properly, the skin of the salmon should be nice and crispy by the time the temperature in the center of the fish reaches 120°F. It should lift and rotate easily. I like to use the same flexible spatula to flip the fish and use a second spatula or fork to gain leverage. Be careful when flipping the fish: you don’t want to damage it so it falls and spills the hot oil.
